Bon Appetit provided food for my Alma in St. Paul, MN. They were very receptive to food waste reduction initiatives. They allowed our student government to run a food waste awareness week. Along with several trayless days in the cafe, we also displayed any wasted food that had not been touched to show that quality food is being trashed. Trayless days were a huge success...I hope every buffet nation-wide follows that trend.
