I work as a food demonstrator in a high end grocery store. The produce, meat and bakery items that get thrown away is disgusting. There is a huge compactor in the back room (behind the scenes) where meat, produce, bakery items and even flowers are compacted. It is a shame that these items are not discounted for quicker sale (Walmart does that) but that is not the business model of this gourmet store. This year the store did implement a program where deli and bakery items are combined in a barrel that has pig food written on it. I don't now where the pig food goes but it is a small attempt in reusing a viable food source. Last week-end the produce manager threw out live rosemary plants because they needed watering. I salvaged one and it is living happily at my house.
